Steps
Ratio 1:9.1 · 1:15.0 (in cup, incl. ice)
Bloom · to 44 g · 93 °C · 130 g ice in vessel · 0:40
Ice is already in the carafe. Pour to 44 g (about twice the dose) and let it bloom.
Pour · to 120 g · 93 °C · 0:45
Pour steadily up to 120 g, brewing onto the ice.
Pour · to 200 g · 93 °C · 1:00
Finish the hot water up to 200 g.
Drawdown
Let the brew draw down onto the ice, then swirl the carafe to chill and serve.
